Banana and Blueberry vegan pancakes with no added sugar

I love pancakes, who doesn’t? I’ve searched high and low on the internet for a healthy vegan pancake so that my youngest (allergic to dairy, soya and eggs) could join in the fun too. Eventually I found a few and after a bit of trial and error made some on pancake day that were actually nice! So I decided to write it down and share it with you all. The bonus with this banana and blueberry vegan recipe is that it has no added sugar, the bananas sweeten it so they are suitable for all times of day with no guilt needed.

Delicious banana and blueberry pancakes. Vegan friendly, dairy, soya and egg free. No added sugar.

Ingredients
1 ripe banana mashed (half a cup)
2/3 cup of almond or oat milk
1 tsp vanilla bean extract
3/4 cup of plain flour (gluten free if you need it to be)
1/2 tsp cinnamon
1 tsp baking powder
pinch of salt
tub of blueberries for the pancakes and topping
manuka honey or maple syrup
Instructions
Puree the banana with milk and vanilla in a blender. (if you don't have one mash it really well).
In a medium sized bowl, mix together the dry ingredients.
Pour the banana/milk mixture into the dry ingredients and stir.
Add the blueberries.
Heat a few teaspoons of coconut oil on a pancake pan if you have one or whatever you use.
Use a ladle to pour a bit at a time of the pancake batter into the pan.
Flip or use a spatula to turn when bubbles start to appear (about 1 minute).
Let the second side cook for about 60 seconds and remove from heat.
For the blueberry topping, place the blueberries in a small bowl with a little bit of maple syrup or manuka honey.
Microwave for 20-30 seconds or until they burst a little.
